Top 5: Peanut Butter Marshmallow Sandwich

A peanut butter marshmallow sandwich that will bring so many flavors together, flavors that will remind you of your childhood and make a simple family meal to enjoy with whipped cream on top!

It’s FRIDAY with Kate and Heather!  Who is ready for a ‘peanut butter marshmallow sandwich’ for dinner?

First I just wanted to say this life passes by so quickly.  Let’s treasure it.   James 4:14, ‘Whereas ye know not what shall be on the morrow. For what is your life? It is even a vapour, that appeareth for a little time, and then vanisheth away.’  

Life is too short to be focused on the calories or the sufferings I have, because Jesus Christ  is risen!  He has conquered over the grave, and these sufferings and fears here are only temporary.  Jesus came to deliver not only from being consumed by the miseries of this life, but from the condemnation of hell and life eternally apart from God.

Let’s talk about all the lessons, the joys, and the beauty of this week.   It was an awesome week.   

Well, I was thinking about it, and 

Every week is good, because God is good.  Even if present circumstances seem dreary, God’s plan is perfect, and He will perfect it despite the trials that come along the way.  

So… let’s get into the week and re-cap it from the food to the highs to the lows to the BEST blog posts! 🙂   

Supporting small businesses is worth it. I an so grateful for @nicoleculver and how she interviews small business owners who are really excited and personal about their businesses. It really stands out to me that all of them are concerned about their customers because it's hard to do that when your company is HUGE. Becca from @ellorawfoods really energised me with her story, and I'm pretty excited about trying her bites. This was not sponsored at all; just what I'm learning about relationships and small business.... I am such a bottomless pit today and I am just thanking the Lord for the mercy of food and being able to eat and nourish the soul and body and mind. 'O thank the Lord for He is good. My Order from Ello Raw Foods: – Nicole Culver interviewed Rebecca, the founder of Ello Raw, and I was just so inspired and encouraged by her excitement and joy for her business that I wanted to try these cute little balls.   

The verdict? – Well, it’s definitely a start-up business, so the package took a while to come, BUT… it was worth the wait.   They went really well on top of ice cream.

Top 3 Gifts

The Joy of the Lord –  I don’t know how I would survive this life without the joy of the Lord Jesus Christ coming down and saving me from despair and hopelessness.  Every day I wake up, and it’s just a wonder to me that I’m alive.  

I’m alive, and it’s only by the grace of God that I am what I am.   I just know that I deserved to go to hell, but the unconditional love of God and mercy shown in the Lord Jesus is the only thing that gives me strong hope to live each day.  

Ephesians 1:6-7, ‘To the praise of the glory of his grace, wherein he hath made us accepted in the beloved. In whom we have redemption through his blood, the forgiveness of sins, according to the riches of his grace;’  

I just can’t understand this love. It’s the mystery of the gospel, that Christ would come in the flesh, die for sinners, and take the justice of God against sin.  I can’t talk enough about it, and I can never express fully this depth of love that fills this small little being.   

  All I can do is be so overcome by the joy of it, that I can tell others about this love that saved me from eternal death.

Animals that SMASH my anxiety: Why do they do that?   It’s because I look at the, and I see that they aren’t worried.  

Yet if I know.  If I cognitively know that God promises that He will never leave nor forsake His children, why would I ever doubt Him?   Animals are such a good reminder to me that I have even more reasons to never be anxious and to cast all my cares on the Lord.  

John 14:27 is one of my favorite verses that comes to head so often when my heart is so tossed by the winds and the waves.  ‘

Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.’

Friends: Both Blogging and My Family in Christ

Word can’t really express how thankful I am for the body of Christ that shows love to me everyday. They show grace to me in ways I don’t deserve, and they shower out mercy on me like never before.  If I’m rotten to them, they love me.  It truly is unconditional love.  

Blogger and reader friends who are reading this, thank you.  You do the very same thing, and I thank my Heavenly Father for you.  

Now…. we get to talk about the TOP 3 LOWS…. 

I don’t want to ever give you the impression that my life is always tidy and perfect and clean.  

It’s INCREDIBLY messy and filled with mighty grace, or else this mess would be so lost.  

1.   I was so sad on Monday, I think?  I was just really discouraged.   I can’t deny that I was depressed.  I kept repeating Scripture and truth to my mind, and it was a ROUGH day.  

I think there was quite a bit of spiritual warfare going on, and I’m so thankful for Peter’s exhortation in 1 Peter 5.   

1 Peter 5:8-10, ‘Be sober, be vigilant; because your adversary the devil, as a roaring lion, walketh about, seeking whom he may devour:Whom resist stedfast in the faith, knowing that the same afflictions are accomplished in your brethren that are in the world.

 But the God of all grace, who hath called us unto his eternal glory by Christ Jesus, after that ye have suffered a while, make you perfect, stablish, strengthen, settle you.’  

And by God’s grace, He always settles me and reminds me that I’m firmly rooted in the Rock of ages.  

2.  Kind of feeling lost with my blogging.  I REALLY want to blog, and I don’t feel burned out.  I just don’t want to be writing and not helping or blessing anyone.  

However, I do want to do it ultimately to glorify God, not to please people.   It’s such a balance of love, but this morning, I was listening to a sermon in which the preacher reminded me that ‘Love is the fulfilling of the law.’  

The Lord Jesus even said that the two greatest commandments?   They were to ‘love the Lord your God with all your heart, soul, mind, and strength and to love your neighbor as yourself.’   

That’s the mission.  

Love

So we’ll go off of that.  If He first loved me, I can love GOD and love all of you with this blogging.  

3….. Being too anxious about calories again. – I’m thankful that God is working in me both to will and to do of His good pleasure. There are days when I feel like a hopeless case, but no matter what the circumstances, I know that He’s going to complete this good work in me.  

The ultimate goal?  The goal is to not focus on calories at all.  

Through Christ Jesus, I will have the victory over this idol. 


Ok, I tend to get WAY too wordy and long winded on these posts, so let’s slow down and get to the last thing I have for you before my favorite blog posts.

Who could say no to this sandwich?  

First of all, I must say that the inspiration for this came from Christina’s Almond Butter Mascarpone Sandwich.  I changed it to a bit more of a … ‘marshmallowey’ sandwich, but I give Christina the credit for the original idea.   You can check out hers and see how I adapted.

It started with some:

Slices of Bread 

Cream Cheese (Instead of Mascarpone) 

Nut Butter Nation Rainforest Dark Chocolate Nut Butter (Instead of Nutella)  

Strawberries (Just cause…)  

And 

Kerfluffle …

Step #1: 
I set it all out on a cutting board so I could stay organized.

Step #2: I seriously felt like a kid putting these together, and it was so freeing to think that I could enjoy a peanut butter marshmallow spread without guilt, knowing that it was a gift from God to enjoy with my family that night.

Step #3: Then came the fun part of spreading on the: 

Marshmallow Spread 

Cream Cheese 

And chocolate nut butter… 

I even burned a couple when I put them on the skillet.  🙂  

The Lord knows how to keep me humble. 

So, how do you make these delicious little sandwiches? 

Peanut Butter Marshmallow Sandwich
Serves 1
Who doesn't want a peanut butter grilled marshmallow sandwich that is filled with the sweet flavor of strawberries, peanut butter, and silky creamy cheese?

Ingredients
  1. 2 slices bread
  2. 1 tbsp. cream cheese
  3. 1/2 tbsp. Rainforest Dark Chocolate Nut Butter
  4. 1 tbsp. Kerfluffle Marshmallow Peanut Butter
  5. 1 strawberry
  6. 1/4-1/2 tbsp. butter
Instructions
  1. Lay the bread out on a cutting board. Spread with the cream cheese on one slice. Spread the Kerfluffle on the other side. Drizzle with dark chocolate nut butter. Slice one strawberry and arrange in an artistic way. Put the sandwich together. Then spread butter on the outside of each side of the sandwich. Preheat a skillet, and place the sandwich in the pre-heated skillet. Turn after 30 seconds-1 minute (watch carefully), till the sandwich is golden brown on both sides.
  2. And ... savor the good flavors of marshmallows and nut butter and cream cheese as a reminder of God's GOODNESS...
