Here is a passage of Scripture for to meditate on today. I’m just amazed, humbled, and floored by all the comments of kindness and compassion I received on yesterday’s post. I’m really undeserving of all of the love, and I can only say that it was another way of God showing His incredible, incomprehensible love to this poor, frail woman.
Hebrews 4:14-16, ‘Since then we have a great high priest who has passed through the heavens, Jesus, the Son of God, let us hold fast our confession. 15 For we do not have a high priest who is unable to sympathize with our weaknesses, but one who in every respect has bent empted as we are, yet without sin. 16 Let us then with confidence draw near to the throne of grace, that we may receive mercy and find grace to help in time of need.’
Maybe it’s just me, but I absolutely love getting guest posts. It’s awesome to get a fresh perspective, a story that reminds me of just how powerful God’s work is in our lives, or a delicious recipe with so many of God’s awesome ingredients.
This is one of those delicious recipes… For Amanda’s Thinking Out Loud, I’m excited to share this recipe from Hilary at Bakes by Ranch Cookie. If I could do anything for the rest of my life, I think it would be pretty wonderful to meet so many of these bloggers and talk about recipe development, God’s work in our lives, and serving Jesus most of all! Thank you Hilary for sharing! And I think I’m going to go make these today.
Hey guys, happy to be popping into Emily’s side of the internet. My name is Hilary and I blog over at http://www.bakesbyranchcookie.com. Throughout the past 5 or 6 years I have struggled with some major digestive issues and decided to start treating my body the way it deserved. I traded in McDonald’s for delicious home cooked meals, and have shared my journey to health and fitness along the way. I met Emily in Bloggers Gonna Blog Group on Facebook. My first impression was this girl is awesome and so kind! And then reading about her recovery and her relationship with the Lord really inspired me! So when she asked me to guest post on her blog I was thrilled!

I noticed that Emily has a love for all things nut butter while browsing her site, so I knew that a nut butter recipe would be perfect to share with her audience! And that is where the Paleo Almond Butter Cup was born. This piece of chocolate is 100% homemade. It takes only 5 minutes to make, 4 ingredients, and it is so creamy and dreamy it will have you wondering how this is made full of all natural whole ingredients that are actually nutritious! If you have any questions feel free to e-mail me at bakesbyranchcookie@gmail.com.
The trick to making these nut butter cups is really having the right ratio of coconut oil to cocoa powder. Too much cocoa powder and well it is just bitter, and too much oil and well you have yourself a very oily bite and who wants that?
These are the perfect treat for your dark chocolate lovers. You can adjust the sweetness as well, and you can totally swap out the almond butter for peanut butter, or even nutella! They are the perfect sweet treat for a group of friends or even a cheaper alternative to buying chocolate in the store. This is also paleo friendly for any of your paleo friends. So grab a pot and get going!
What you need?
Stove pot
½ cup Coconut oil
2/3 cup Unsweetened Cocoa Powder
¼ cup Nut butter of choice (I used Trader Joe’s Creamy Almond Butter)
¼ cup Honey (more or less will work depending on your sweetness)
Directions
Start with a pot on medium heat melt your coconut oil. Once the coconut oil is liquid add your cocoa powder, nut butter and honey and stir. Then grab a mini muffin tin, and fill the cups with the chocolate mixture. Stick in fridge for about 30 minutes to harden your chocolates and you have yourself a paleo homemade nut butter cup.

May God be with you today!!!
What’s your favorite nut butter?
